The matter isn't actually destroyed, it is merely in another form caused by the fires intense heat and chemical properties

No. Sorry. You forgot about all the smoke particles and hot gases that sailed away while the wood was burning. Gather those all together, and you'll find that their mass, plus the mass of the pile of ashes, matches the original mass of the unburned log.
